Lamb Madras | A hotter, sharper dish, but very popular. Strong tomato based sauce with lamb that has been marinated and braised over a period of time. Sometimes capsicums are added for extra flavour along with yoghurt and ginger. Served with basmati rice and roti to wipe up the juices, it is a must for curry lovers, but a little spicy perhaps.
